  • In this case, the word "Nature" on the label of this 1701 Franciacorta DOCG has a double meaning. It indicates the degree of sweetness of the wine, Brut Nature, therefore super dry. But it can also bring to mind the concept of "natural". Because, in this case, as in all the Brescian company's wines, we are dealing with wines produced following the principles of biodynamic agriculture, without the use of chemicals or synthetic products. With 85% Chardonnay and 15% Pinot Noir, this sparkling wine is designed for those who do not accept compromises and want to fully enjoy the characteristics of the original grapes. No sugar is added, in fact, in this case. The wine in the bottle is exactly the expression of its terroir. Without compromise. Harvested strictly by hand, the best grapes are taken to the winery's cellars and gently pressed. The first fermentation begins in stainless steel, using indigenous yeasts, while the second, in the bottle, is followed by about 30 months of refinement on the lees. Pale straw yellow in colour, this Franciacorta has an extremely fine and persistent bubble. The nose reveals fresh and elegant hints of citrus peel, followed by chamomile, golden apple and hints of pastry. In the mouth it is striking for its definition and its ability to be both creamy and endowed with a beautiful verticality. It is definitely a Metodo Classico sparkling wine for the whole meal.

    Eleven - magnificent - hectares. One of the oldest wine-growing estates in the area. Three hundred years of history and an extraordinary four-hectare vineyard enclosed by 11th-century walls. All this is 1701, the first winery to be entirely converted to biodynamics in Franciacorta. The winery is run by Federico and Silvia Stefini, siblings and partners, who produce their wines, especially sparkling but also still, following the strict protocols of clean agriculture that respects the land. Modern techniques, but inspired by a production philosophy linked to the most virtuous traditions. Only biodynamic preparations are used in the vineyard and every process, from the simplest to the most complex, is carried out scrupulously following the different phases of the moon. Synthetic chemicals are banned in the vineyard and in the cellar. The grapes, rigorously hand-picked, ferment according to the rhythms of nature, thanks to "pied de cuve" created with native yeasts. And the wines' bottle-ageing always goes well beyond the minimum prescribed by the DOCG's strict production regulations. The result of all this attention is amply rewarded from the very first taste. The total production of 1701 is around 50 thousand bottles. A winery to be discovered...
