The skins only need a few hours of maceration in the must, even two or three, to give the final wine a bright pink colour that is, frankly, quite inviting. After all, the starting grapes are vines grown under the hot Aeolian sun and their skins are rich in colouring substances. Obtained from Corinto Nero and Nerello Mascalese, it is a great rosé, son of a volcanic land rich in suggestion. The nose reveals a floral bouquet reminiscent of wild roses, with hints typical of the Mediterranean maquis and citrus notes of pink grapefruit. In the mouth, on the other hand, it is characterised above all by its fine minerality, which directly recalls the wine's origins, but also by its great freshness, which makes it extremely easy to drink and pair. Excellent, for example, with fish starters and seafood salads.
For over 40 years, the Colosi family has been cultivating vineyards on charming terraces overlooking the sea of Salina, the small island of the Aeolian archipelago, a land highly suited to the cultivation of vines. 10 hectares between Capo Faro and Porri, one of the areas considered among the best, both for exposure and for the nature of the soil. Vineyards on old terraces, obtained by restoring old dry-stone walls, where the typical varieties of the island are grown, from Corinto Nero, Nerello Cappuccio, Nerello Mascalese, Inzolia, Catarratto and Malvasia. Malvasia, in particular, is the main grape variety in the entire wine production of the territory and of the Colosi company. Colosi's production is centred on indigenous grapes from the archipelago but also from Sicily, thanks to twenty-year collaboration contracts with selected Sicilian producers.
