    "Dom" Mosel Riesling 2021
  • The Riesling Trocken Dom from Bischöfliche Weingüter Trier is a splendid example of the quality of whites from the Mosel Valley in Germany. The vineyards from which the grapes used for the production of this Trocken - i.e. dry - Dom Riesling are sourced extend over approximately 50 hectares of land, facing south-east. After all, without ideal exposure, it would be virtually impossible for the Riesling, which also loves the cool climate, to reach maturity with the right concentration of sugars to be transformed into alcohol. Harvesting, as is typical for these areas, is entirely manual. Vinification, on the other hand, takes place exclusively in steel tanks, followed by a phase of wine ageing in contact with its own yeasts for a few months. Straw yellow with golden highlights, this Riesling reveals a varied bouquet, with notes of peach and apricot, citrusy hints reminiscent of lemon and white flowers. In the mouth, it is appropriately fresh and mineral. Good fruit, rich and concentrated, and a persistent finish. Excellent with fried fish, shellfish and crustacean appetisers, and spicy Asian dishes.

    Bischöfliche Weingüter Trier is located in the Mosel region of Germany. Its origins are very old. They date back as far as 1772, when Archbishop Wenceslaus of Saxony created the Bischöfliche Priesterseminar, which to this day is still an important religious training centre of the Trier Diocese. The 'modern' history of the wine cellar dates back to 1966, thanks to the merger of several entities, Bischöfliches Konvikt, Bischöfliches Priestersemi and Hohe Domkirche. Today, Bischöfliche Weingüter Trier owns extraordinarily valuable plots of land and offers a range of high-quality wines, made according to the oldest local traditions. Steep, non-mechanisable vineyards and a modern processing cellar, equipped with stainless steel vats for vinification and about a thousand barrels for ageing, are its distinguishing features.
