"Aristos" Riesling Alto Adige DOC 2021

Aristos is one of the most interesting lines of the Cantina Valle Isarco. In this case it is a fragrant Riesling with a delicate and slightly aromatic fruitiness. It comes from vineyards cultivated at high altitudes, where the climate is not simply cool but decidedly cold and where the stony soils allow this particular variety to express itself at its best. After a short cold maceration in contact with the skins, the grapes are pressed and fermentation takes place in steel vats at a controlled temperature. This phase is followed by a period of maturation on its own lees which lasts about 7 months and contributes to enrich the wine and make it even richer. The result is a bright straw yellow glass of wine, with definite golden hues. The nose is of rennet apple, citrus, fresh grass and white flowers. In the mouth it is fresh and elegant, with a long and pleasantly aromatic finish.
