  • Vinification the grapes are harvested by hand in crates, for the first selection, in two different harvest periods: the first early in technological pre-maturity to ensure a greater acid concentration, the second in natural drying on the plant with the maceration of the skin technique to maximize the potential of the variety. The harvest is followed by a second selection of the grapes using sorting strips. After destemming and soft pressing, the must ferments at a controlled temperature in small steel tanks. Fermentation takes place separately for the individual harvests to have a varied bouquet. Decantation takes place in a natural way, without the addition of inorganic wine adjuvants and sulphur dioxide. It is helped only by lowering the temperature to separate the coarse lees before natural fermentation occurs. Alcoholic fermentation lasts about 40-60 days at low temperatures. The second harvest starts the initial fermentation in steel with the skins, together with which it carries out a maceration that lasts about a week at 8?C, after which the young must is decanted into fermentation tanks where it remains to reach full aging.

  • Ra'is is made from Moscato grapes harvested on the Contrada Baroni estate in Noto. Ra'is is a memory of the day when Count Paolo Marzotto, still a child, asked his mother to give him a bottle of Muscat as a gift. In the glass, it has a beautiful straw yellow color with greenish reflections. On the nose it is unmistakable, with intense hints of citrus, apricot, honey and dates. On the palate it is both sweet and fresh, thanks to an exceptional balance between sugars, acidity and hints of caramelized almonds. This result is obtained thanks to a special production technique that involves harvesting the grapes at two different times. The first, earlier, ensures a higher acidic concentration. The second, natural drying on the plant, exalts the variety potential to the maximum. This is followed by further manual selection on sorting strips, destemming and soft pressing. After vinification, in small steel tanks, the base remains in sur-lie for a year, then a passage in barrique for another 12 months. And after bottling there is a further phase of refinement in glass for at least two years.
