    "L'Ormarins" Méthode Cap Classique Brut
  • Ormarins Brut is a classic method sparkling wine originating in South Africa. It therefore belongs to the category of Méthode Cap Classique. It is produced by the Anthonij Rupert winery, a fine establishment located in the Western Cape region of Franschhoek. French in style, this interesting South African classic method is made from 53 percent Chardonnay and Pinot Noir grapes. Chardonnay, in particular, grown with modern espalier systems, comes from both Darling and L'Ormarins and Robertson. The soils here are composed of clay shale and rich in organic matter. Pinot Noir, on the other hand, comes from vineyards located mainly on the L'Ormarins estate and only to a lesser extent from the Altima, Darling and Robertson estates. All vineyards located on steep slopes, about 200 meters above sea level. Grapes are hand-picked and whole cluster pressed. Each batch of grapes is processed separately, and the must is allowed to rest on the skins, and inoculated with yeast. After fermentation, the base wine is filtered from the skins and added the necessary sugars to start the second fermentation in the bottle. Once in the cellar, the wine matures slowly in the bottle for 24 to 48 months. Disgorgement then takes place, during which a mix of base wine and sugars is added. This is followed by further aging for about 3 months before marketing. Straw yellow with a rich, fine, uninterrupted perlage, notes of fresh fruit and citrus, particularly lime, are easy to discern on the nose. In the mouth, however, it is pleasantly fresh, with notes of apple and brioche, softened by a creamy texture and a lingering finish. Ideal with shellfish and crustaceans. Also excellent with vegetarian dishes and as an aperitif.

In 1694 the land of L'Ormarins was attributed to the Huguenot Jean Roi. 51 hectares total in the Franschhoek region of South Africa, where orchards and 4,000 vines were planted. The tradition has continued over the centuries, and in 1833 L'Ormarins produced the country's first brandy from its own wines. Under the direction of Anthonij Rupert, then, the L'Ormarins estate won all the major local wine competitions. Later, when Anthonij passed away, in 2001 the leadership of the estate was passed onto his brother Johann, who breathed new life into the winery, favoring solutions that were always at the forefront of the winemaking process. Finally, in 2004, the team was joined by Michel Rolland, an internationally renowned winemaker. Today, Anthonij Rupert Wine Estate is among the most technically advanced wineries in South Africa, a perfect expression of the meeting of Old World winemaking techniques with the peculiarities and characteristics of South Africa's terroir and climate.
