Azienda Agricola G.D. Vajra - Piazza della Vite e del Vino, 1 - Fraz. Vergne 12060 Barolo (CN)
A great Italian sweet wine that captivates with its remarkable refinement, completely overturning the clichés often associated with dessert wines. We are between Mango and Santo Stefano Belbo, in the province of Asti, at the heart of one of Italy’s most fascinating wine-growing regions. The landscape is characterised by steep hills and marl-rich soils that give the wines an aromatic elegance rarely found elsewhere. Here, the Vajra family pursues a fascinating and unconventional philosophy. They have always believed in allowing the grapes a few extra days on the vine. This act of patience and trust rewards the wine with extraordinary depth and character, far removed from industrial production methods. It is made exclusively from Moscato Bianco grapes. This historic and aromatic variety reaches its purest expression here, finding its ideal habitat in the unique microclimate of Asti. Every stage of production is carefully managed to preserve freshness in the glass. Harvest begins at the end of August and continues until the end of September. Each individual parcel is hand-picked at precisely the right moment. The grapes are then pressed with extreme care. Fermentation takes place in small batches throughout the season, a crucial step that preserves the freshest and most captivating fruit aromas in every bottle. In the glass, the wine reveals a bright appearance and a fine, inviting mousse. The bouquet opens with notes of pear, apricot and orange blossom. Delicate hints of elderflower and white petals lift the aromatic profile, while subtle nuances of acacia honey add depth and complexity. On the palate, it is creamy yet exceptionally elegant, lively and juicy. Flavours of ripe pear and white fruits unfold alongside vibrant floral notes. The sweetness is delicate and never cloying, supported by a fine sparkle. Its silky texture is enlivened by bright acidity, creating perfect balance. The finish is clean, fragrant and persistent, with lingering floral notes and delicate honeyed nuances. Try it with a classic fresh fruit tart, where the wine’s sweetness beautifully complements both the pastry and the fruit’s acidity. It also pairs wonderfully with biscuits and traditional Piedmontese amaretti. For a more adventurous pairing, serve it alongside blue cheeses.
