A wine that is a bit like a child of art: born of great talent and promising to become something special. And it already has its own well-defined personality. This is Young Vines from Thymiopoulos Vineyards, a pure Xinomavro, which surprises with its freshness and immediacy. We are in Naoussa, in northern Greece. Here, the ancient Xinomavro grape variety reigns supreme. The Thymiopoulos family has a history of dedication that is deeply intertwined with the cultivation of this grape, much like the roots of their vines cling to the soil. Here, the climate is key: hot summers and harsh winters are mitigated by the breeze that descends from Mount Vermio, creating the perfect conditions for the grapes to ripen slowly and gradually. In the cellar, an approach is chosen that enhances the freshness and vitality of the fruit. The grapes are harvested by hand and fermentation takes place in steel tanks to preserve the primary aromas, i.e. those of the fruit itself. Ruby red in colour, the nose releases lively and inviting notes of fresh red fruits: cherry, wild strawberry and currant. There are also vegetal hints reminiscent of dried tomato and olive, typical of Xinomavro. On the palate, it is an agile and slender wine, with a lively acidity that makes it incredibly drinkable. The tannins, present but never aggressive, are soft and silky. The finish is clean, with a return of red fruits and a nice sensation of freshness. This wine is incredibly versatile at the table. It pairs perfectly with tomato-based dishes, such as pasta with meat sauce or margherita pizza, where the acidity of the wine balances that of the tomato.
