"Monte dei Cocci" Negroamaro Puglia IGP 2021

Monte dei Cocci is a pure Negroamaro, Puglia IGP, from Tenute Girolamo. In this case, the grapes come from Valle d'Itria, from vineyards cultivated at about 450 metres above sea level. Here the climate is mild and characterised by a beneficial temperature range between day and night that favours the perfect ripening of the grapes. The soil, rich in limestone, is composed of red soils, rich in minerals. After the harvest, the grapes are soon brought to the cellar to be subjected to a soft pressing, followed by maceration and fermentation, which in this case takes place entirely in French oak truncated conical vats. At the end of maturation, the wine undergoes a phase of maturation in barriques, also made of French oak, for about 6 months. The wine is then bottled and left to mature for a further 6 months in the cellar before release. Ruby red in colour with garnet hues, the nose reveals an intense and powerful bouquet, with notes of candied orange peel, mandarin, plum, pepper, cinnamon and floral aromas. In the mouth it is pleasantly tannic. Elegant, warm and enveloping. Precisely the tannic richness makes this wine suitable for meat dishes or savoury first courses.
