The Elat, Isola dei Nuraghi IGT by Cantine Sardus Pater is a fresh, young white wine, produced from the characteristic red grapes of Sulcis and vinified in white, i.e. without tank contact between skins and must. The white vinification of Elat takes place in steel at low temperatures, followed by 6 months of ageing on fine lees with daily bâtonnage. The result is a wine characterised by a beautiful yellow colour with auburn reflections, unique in its kind, obtained also thanks to careful processing in the cellar and by shielding the wine from oxygen throughout the transformation process, to avoid oxidation that leads to a partial change in colour and the (equally partial) loss of the more subtle, floral and balsamic aromas, typical of the grapes. On the nose, in fact, Elat presents intense aromas of white flowers with balsamic hints. In the mouth, it is lively, with good sapidity and pleasant freshness. Notes of eucalyptus and medicinal herbs take over, giving the wine a unique personality. The finish is persistent and leaves a fresh and aromatic sensation in the mouth. Excellent as an aperitif, Elat and goes well with seafood and shellfish dishes, fish crudités, sushi and sashimi.
Cantina Sardus Pater is a cooperative founded in 1949. Today, it can count on the cooperation of about 200 members who work about 300 hectares of their own vineyards. The winery's main vocation is to produce the prized Carignano del Sulcis, with grapes harvested in historical vineyards that are still free-range.
