    • Sensations In the glass it appears deep ruby red, vibrant and compact. On the nose it opens with intense aromas of ripe red fruits (cherry, plum) accompanied by spicy notes of black pepper, liquorice and subtle earthy hints. The bouquet is elegant and progressive, without excess, with a touch of vanilla from well-integrated wood. On the palate it is full and enveloping, with soft yet present tannins, good structure and a solid balance between fruit and acidity. The flavours recall ripe fruit, sweet spices and a hint of bitter cocoa, with a long, warm and pleasantly savoury finish.
    • Vinification The Sangiovese harvest was carried out in two stages, starting at the end of September and finishing in mid-October, by hand with transport to the cellar in small crates. The must from the destemmed grapes, with nearly one third whole berries, macerated for about 15 days in stainless steel fermenters using only vineyard yeasts. Pump-over techniques combined with délestage allowed the must-wine to be sprinkled over the cap, helping modulate maceration intensity according to fermentation vigour. The wine matures in 500-litre terracotta amphorae for about 5 months. The vessels, made with Impruneta clay, are over three centimetres thick and neither glazed nor waxed. The natural porosity of the terracotta ensures constant micro-oxygenation, while its egg shape dynamises the wine mass and gives the wine perfect maturation within eight months.

    • A Sangiovese produced in amphora, just as it was done centuries ago. This is the project that gave life to Soloterra from Mulini di Segalari. A return to the origins that carries the scent of earth and sea. A wine that chooses to strip away the superfluous to reveal its purest and most vibrant soul. We are in Castagneto Carducci, in the heart of the Tuscan coast, where sea breezes brush the vineyard rows and soften the summer heat. Here the Mulini di Segalari estate works under organic farming, following a philosophy centred on respect for the environment. A curiosity: the estate has adopted the “a cavalca poggio” row system. Instead of forcing nature, the natural slope of the land is followed, allowing water to drain properly and the vines to receive optimal sunlight. Made entirely from Sangiovese, this red wine is crafted through artisanal work. The grapes are harvested by hand between the end of September and mid-October, leaving about one third of the berries whole during fermentation to preserve the freshness of the fruit. The wine then matures for about 5 months in terracotta amphorae from Impruneta. These unglazed 500-litre vessels allow constant micro-oxygenation, smoothing the wine without adding the intrusive aromas of small oak barrels. A method that lets Sangiovese breathe, making it incredibly dynamic and alive. In the glass it appears a deep ruby red, vibrant and compact. On the nose there are ripe cherry and plum aromas, followed by spicy hints of black pepper and liquorice. On the palate it enters full and enveloping. The tannins are present but already soft, balanced by a lively acidity that makes the sip long and flavourful. On the finish a hint of bitter cocoa appears, closing the tasting with great elegance. It is a wine that makes no compromises on quality. It pairs beautifully with roasts and grilled meats, but also works wonderfully with noble game, perhaps enhanced with aromatic herbs. Cheese lovers should try it with aged pecorino.

We are in the cooler, hillier part of the Bolgheri appellation, about 100 metres above sea level. While the Bolgheri coast is kissed by sun and warmth, the vineyards of Mulini di Segalari enjoy a unique microclimate, protected by woods and refreshed by sea breezes. The result? Wines that do not rely solely on power, but surprise with remarkable freshness and drinkability. The estate is organically certified and follows biodynamic principles. The philosophy is to “accompany” the grapes, not force them. Indigenous yeasts are used and the use of sulphites is kept to a minimum. It is an approach that requires courage and total dedication, yet it produces wines capable of reflecting the vintage and the soil almost photographically. Just under 3 hectares of vineyards host the classic grape varieties of the area: Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot, along with a touch of Sangiovese and Vermentino.
