In this case, the cuvée is composed of a selection of white grape varieties typical of the Veneto region. Charmat method, or Martinotti method, after a soft pressing of the grapes to extract only the best must, the sparkling process takes place in large pressure-tight steel containers, the autoclaves. This technique is perfect for preserving the primary aromas of the grapes, those reminiscent of fresh flowers and freshly picked fruit. The result is a lively sparkling wine that does not need years of ageing to assert itself, but focuses entirely on its youthful energy. Pale straw yellow in colour, enlivened by a generous mousse and lively perlage, the nose is a small spring bouquet with acacia flowers and honey standing out. There are also crisp notes of golden apple and pear, followed by sweeter hints of apricot and peach. There is also a fragrant hint of bread crust and almond, which adds a touch of elegance. It is soft on the palate thanks to the generous “Extra Dry” sugar residue, but the freshness perfectly balances the sweetness. A sparkling wine to be drunk young, it is not meant to be left to age in the cellar but to be uncorked fresh and enjoyed at the peak of its fruity exuberance. After all, it is the ultimate “all-day” aperitif, perfect with classic Venetian tramezzini or a generous club sandwich.
