TrentoDOC Talento, this Metodo Classico represents the utmost authenticity of the extraordinary terroir of Vallagarina and the high hills of the Dolomites. Made from a cuvée of Chardonnay and Pinot Noir grapes, it is aged on its lees for no less than 24 months before being disgorged and refilled without the addition of dosage syrup. Brilliant straw yellow, this bubble has a particularly fine and persistent perlage. The nose reveals good intensity and absolute finesse, with light hints of apple and bread crust. Fresh fruit also guides the palate. Dry and decisive, it is easy to find the fruity scents perceived previously, as well as a pleasant acidic streak. With a plate of prosciutto crudo and a few shavings of Parmesan cheese, this sparkling wine will make any snack unforgettable. At the table, it goes well with fish starters, shellfish or sushi and sashimi.
