A young, ready-to-drink red wine, Il Bajo is a Montepulciano d'Abruzzo DOC produced by the Talamonti Winery. As per regulations, it is made exclusively from Montepulciano grapes. These are harvested by hand in mid-October in the winery's vineyards in Loreto Aprutino, Abruzzo. Here, the soil is rich in limestone and extends to an altitude of about 300 metres above sea level. The good south-east exposure and the traditional pergola training system allow the producers to harvest healthy and perfectly ripe grapes. In the cellar, vinification involves traditional fermentation for 10 days in temperature-controlled steel vats, followed by ageing in 34-hectolitre French oak barrels for 6 months. The wine is then aged in the bottle for two months before being released for sale. A vegan-friendly wine, Bajo has an intense red colour with violet hues. The nose immediately reveals a bouquet of ripe red fruits, such as cherry and plum, enriched by spicy notes due in part to the ageing in wood. On the palate, it is a fresh and drinkable wine, with soft tannins and good acidity. Although designed for vegan consumers, this wine pairs perfectly with grilled meats and typical dishes of Abruzzo cuisine, such as timballo. In general, it requires flavourful dishes, preferably seasoned with tomato.
