After destemming and crushing, traditional fermentation takes place for 10 days in temperature-controlled steel vats. The wine then matures in 34hl French oak barrels for 6 months. This is followed by 2 months of ageing in the bottle.

    "Bajo" Montepulciano d'Abruzzo DOC 2024
    • A young, ready-to-drink red wine, Il Bajo is a Montepulciano d'Abruzzo DOC produced by the Talamonti Winery. As per regulations, it is made exclusively from Montepulciano grapes. These are harvested by hand in mid-October in the winery's vineyards in Loreto Aprutino, Abruzzo. Here, the soil is rich in limestone and extends to an altitude of about 300 metres above sea level. The good south-east exposure and the traditional pergola training system allow the producers to harvest healthy and perfectly ripe grapes. In the cellar, vinification involves traditional fermentation for 10 days in temperature-controlled steel vats, followed by ageing in 34-hectolitre French oak barrels for 6 months. The wine is then aged in the bottle for two months before being released for sale. A vegan-friendly wine, Bajo has an intense red colour with violet hues. The nose immediately reveals a bouquet of ripe red fruits, such as cherry and plum, enriched by spicy notes due in part to the ageing in wood. On the palate, it is a fresh and drinkable wine, with soft tannins and good acidity. Although designed for vegan consumers, this wine pairs perfectly with grilled meats and typical dishes of Abruzzo cuisine, such as timballo. In general, it requires flavourful dishes, preferably seasoned with tomato.

      Tenuta Talamonti is a family-run winery located in Loreto Aprutino, in Abruzzo. Founded in 2001, it now has 45 hectares of vineyards and olive groves. Its wines are sustainable, thanks to SQNPI integrated production certification and the exclusive use of energy from renewable sources since 2015. The estate is nestled in a hilly landscape, 300 metres above sea level, and benefits from a unique microclimate influenced by the proximity of the Adriatic Sea and the Apennine Mountains. The soil here is composed of calcareous clay with volcanic layers. This is what guarantees the high quality of the grapes harvested and, consequently, of the wines produced. The countryside is dominated by native varieties, such as Montepulciano, Trebbiano d'Abruzzo and Pecorino.
