The wine that brings everyday Tuscany to the table. It is produced by Fattoria del Cerro, located in Acquaviva di Montepulciano, on the hills separating Valdichiana and Val d'Orcia. Its vineyards climb between 250 and 400 metres above sea level, on Pliocene soils of sand and clay, the legacy of an ancient seabed. Here, hot, breezy days are followed by cool nights, and the temperature change fixes lively aromas and soft tannins, while the 360° exposure allows each parcel to be harvested at the ideal moment. It is no coincidence that the Etruscans cultivated vines here, and Montepulciano was later celebrated as “King of all wines” by the physician-poet Francesco Redi in 1685. Fattoria del Cerro's cuvée is made almost entirely from Prugnolo Gentile, with a small amount of Mammolo. Prugnolo, a local biotype of Sangiovese, guarantees structure and freshness, while Mammolo adds a characteristic violet aroma, hence the name of the grape variety, and softens the palate. The grapes are harvested in mid-September. Fermentation takes place in steel tanks with daily pumping over to extract colour and aromas. This is followed by a short post-fermentation maceration and, after racking, the wine matures for about four months in steel tanks, preserving the fragrance of the fruit, before resting in the bottle prior to sale. The minimalist approach emphasises drinkability and varietal purity. In the glass, it is bright ruby red with purple reflections. The nose is dominated by black cherry, crisp cherry and sweet violet, followed by a hint of vanilla. The palate is smooth: medium-bodied with fine, well-integrated tannins and fresh acidity that lengthens the finish with notes of red fruit and liquorice. Versatile and gastronomic, it pairs well with Tuscan cold cuts, pici al ragù di Chianina, lasagne, grilled or casseroled red meats and young Pecorino di Pienza.
