"Roös" Spumante Rosato Brut - Foss Marai

Foss Marai loves to amaze. This is a fact. And in this case the surprise comes from the fact that Roös, although a sparkling wine, is not made from the classic vines of the region. Roös, in fact, is an elegant rosé that comes from Masseria la Sorba, the winery's Apulian property, where Foss Marai has undertaken a long process of rediscovery and enhancement of ancient native grape varieties that are no longer in use but are of high quality. With a colour reminiscent of rose petals and reflections between ruby and pomegranate, this sparkling wine surprises with a lively and complex bouquet. It is easy to perceive right away the rich array of berries, with a predominance of blueberries and cherries. In the mouth it is initially round and warm, before becoming fragrant and refreshing. Excellent with the whole meal, it is a bubble that is not afraid of combinations of a certain depth. Excellent with fish, it also accompanies meat-based dishes that are not overly structured. To enjoy it to the fullest, however, let's not forget to add some slices of salami or medium-aged cheeses to our table.

Since 1986 Carlo Biasiotto and his family have been the soul of one of the most appreciated sparkling wine companies in Italy. We are talking about Foss Marai, one of the symbols of quality Prosecco. The company is located in the heart of the Conegliano Valdobbiadene denomination, in Guia. Here, in a valley called Marai, in a splendid hilly context covered by Glera vines, the family produces its sparkling wines. The aim is to create a line of unique products, capable of standing out in an extremely crowded scenario. Starting with the shape and design of the bottles, which are unique and sought-after, and the long and meticulous work of recovering the traditional grape varieties, often used in the production of the high quality sparkling wines produced by the company. The work of research and renewal is practically constant and this is why the Biasotto family's motto is "leniter in itinere", which in Latin means slowly on the way. A journey that began years ago in a remote corner of the world's most beautiful hills and that will continue unceasingly until it reaches every corner of the world.   • Vinification The grapes are harvested during the first ten days of September, strictly by hand to preserve their integrity. The grapes are pressed and the must is immediately separated from the marc in such a way as not to allow important transfers of colour and tannins. In this case we speak of blending because the grapes are assembled directly in the field during the harvesting phase. Fermentation at a controlled temperature of 17° C, with selected Foss Marai S.p.a. yeasts. Foaming, which lasts 30 to 40 days, takes place in autoclaves where, in addition to the addition of sucrose, selected Foss Marai S.p.A. yeasts are used once again, giving the product the uniqueness and inimitability that can be seen in all the company's products.
