Villa dei Baroni Etna Bianco DOC is made from 100% Carricante grapes. "u carricanti", its traditional name in Sicilian dialect, recalls its great generosity. Left free to produce, in fact, the Carricante is able to bring to maturity an enormous quantity of grapes, with which (in the past) whole wagons were filled. Today, of course, things are quite different. The great vigour of the plant is largely regulated thanks to constant interventions in the vineyard and fewer grapes arrive ready for harvesting, but they are of a decidedly higher quality. This, after all, is the goal that every manufacturer should pursue. The result is a wine of great structure and longevity, thanks to the magical combination of altitude and cool temperatures, typical for Etna, which give this wine a complex flavour, savoury, intense and elegant. With fruity notes of green apple and citrus. Don't treat it as a simple white wine and don't try to pair it with a simple baked fish. This wine, despite its colour, has structure and character, and requires a strong flavour pairing.
