"Taif" Terre Siciliane IGP 2022

Taif, Terre Siciliane IGP proposed here by Cantine Fina, is the best demonstration that a great aromatic grape variety like Zibibbo, normally associated with the production of sweet wines, can also be perfect for creating interesting dry whites, excellent to be served throughout a meal, starting with an aperitif. Taif, 100% Zibibbo, comes from the winery's vineyards located in western Sicily, on a gentle hillside about 300 metres above sea level. At the end of August, the best grapes are harvested and quickly brought to the cellar to be processed in full respect of the raw material. Fermentation in stainless steel vats and refinement in bottles for six months before release. In the glass it has a beautiful straw yellow colour with greenish reflections. Round, mineral and fresh, this intriguing aromatic white wine has a broad bouquet that ranges from fruity scents of peach and mandarin to herbaceous hints of sage. Above all, however, what is most striking is the finish that recalls floral notes of rose and wisteria. On the palate, it initially has a warm note, but this is well balanced by its natural freshness and delicate acidity. Persistent, it has a pleasantly floral finish. It goes very well with starters and shellfish. It is also perfect with delicately smoked and fried fish.
