  • Vinification After destemming and crushing, the grapes are fermented for 8-10 days at a temperature of 26°C. After racking, the wine is decanted into vitrified cement tanks where malolactic fermentation takes place. After a period of ageing, the wine is sold no earlier than 1 April following the harvest.

    "Arenada" Monica di Sardegna DOC 2020
  • Among the indigenous grape varieties, i.e. typical of the region of Sardinia, one cannot fail to mention Monica di Sardegna, one of the oldest cultivated in the region. Historically, it is used to produce both red and rosé wines. The Monica vine is the basis of this Arenada, proposed by Cantina Siociale di Dolianova. 90% Monica, 10% native red grapes, all the grapes come from vineyards close to the winery, where the hot, almost arid climate heavily characterises the quality of the grapes produced. After destemming, the grapes, which arrive at the winery within minutes of being harvested, are sent to fermentation, which lasts for a total of 8-10 days. After racking, the wine is decanted into vitrified cement tanks where malolactic fermentation takes place. Then, after an ageing period of several months, it is bottled and marketed. Not before 1 April following the harvest. Ruby red in colour with violet reflections, tending towards garnet with ageing, the nose reveals an intense and persistent bouquet. Ethereal, vinous, with hints of raspberry and cherry. In the mouth, it is pleasantly warm and rightly tannic. Long persistent, it retains a delicate herbaceous vein. It is a perfect accompaniment to dry soups, risottos, lean meats and medium-aged cheeses.

    Founded in 1949 by thirty-five winegrowers, Cantine di Dolianova has grown and prospered over time, reaching goals that were certainly not even remotely imaginable at the time. Today there are more than three hundred members and, very importantly, many of them are now the children or grandchildren of the founding members. In a sort of generational passage, much appreciated in the wine world. Today, the Cellars can therefore count on a heritage of around 1200 hectares of their own vineyards, mostly concentrated in Parteolla, in the south of Sardinia, one of the sunniest parts of the island. Thanks to this heritage, the company's sales force is able to sell more than four million bottles a year. Numbers that, in a viticultural panorama such as that of Sardinia, make Dolianova one of the largest and most virtuous realities in the sector. The winery's production is focused (as it should be) on the island's many indigenous grape varieties. From Cannonau to Monica, Nuragus, Vermentino, Nasco, Barbera Sarda and Moscato.
