Kairós is an inviting Falanghina dei Campi Flegrei DOC. A white wine of fine character that is born on soils of ancient volcanic origin, acquiring a unique and clearly recognisable personality. The grapes used for its production come from vineyards that enjoy good exposure and are located about 130 metres above sea level. This, together with the relative proximity to the coast, ensures that the ripening grapes enjoy sun and warmth but also a pleasant breeze that limits the risk of excessive heat. The volcanic soil also means that phylloxera has not arrived in these parts, allowing growers to grow their vines on free-range, i.e. without the need to graft traditional varieties onto American roots. The bunches of grapes are hand-picked and transported to the cellar in perforated crates, selected and softly pressed. Fermentation is carried out strictly at a low temperature, followed by refinement for 5 months in steel tanks in contact with their "noble lees". Only then is the wine ready to be bottled and put on the market. Straw yellow, the most evident scents are those of flowers and ripe fruit. In the mouth it is initially soft, then fresh with a characteristic, decidedly mineral finish. It is the perfect wine to accompany an aperitif with friends. Excellent on a thousand occasions, it accompanies simple fish and shellfish dishes. Also perfect with delicate vegetarian dishes.

The Piedirosso and Falanghina varieties come from Campi Flegrei and are used for the production of DOC wines. Aglianico and Falanghina come from Sannio, while Primitivo comes from the Aurunci area, between lower Lazio and the province of Caserta. However, the main focus of activities takes place in the cellar. The white and red wines follow different procedures and timescales. Each bunch of grapes is carefully selected and processed in full respect of the raw material. Each vat is followed and monitored at all stages, so that the wines can reach the delicate stage of refinement at the right time, without stress.
