"Occhione" Campo di Sasso Toscana IGT Bianco 2022 - Tenuta di Biserno

It is called Occhione and is a Toscana IGT proposed here by Campo di Sasso. A white wine obtained mainly from Vermentino grapes, with a small percentage of Viognier. All the vineyards, in this case, are located near the sea. And it is precisely its presence that exerts a strong influence on the grapes. The soil, a mixture of clay and sand, then favours the expression of the qualities of Vermentino. Vinification begins with the manual harvesting of the grapes. Once in the cellar, the grapes are softly crushed and destemmed. The must obtained is then transferred to stainless steel tanks, where fermentation begins at a controlled temperature. After processing, the wine rests for about 5 months before being sent for bottling. In the glass it has a beautiful bright straw yellow colour. On the nose, mineral, citrus and white flower notes stand out. In the mouth, Occhione is fresh and pleasant. Harmonious, with a pleasantly savoury finish. Perfect as an aperitif, it is a fresh white wine that goes well with meat and fish hors d'oeuvres and white meat main courses.

The one we are talking about here is a company that is part of the large Antinori family group, a name that certainly needs no introduction in the world of wine. We are talking about Campo di Sasso, a winery located in Bibbona, in the western part of the Tuscan Maremma. Here, what creates ideal conditions for the production of quality wines are above all the climatic conditions, which are perfect for the cultivation of grapes rich in aroma and colour. In particular the Syrah, not by chance used for the production of the estate's most representative wine. Over the years, the Antinori family, with Marquis Lodovico at the helm, has initiated an oenological project of the highest quality here in Maremma, producing wines of great elegance and personality. Thanks also to the collaboration with the famous oenologist Michel Rolland, who has been able to make the most of the peculiarities of each variety. Then, in 2018, the Marquis' daughter, Sophia, contributed to the start of a new phase, focusing on the production of a refined rosé. Thus Sof was born, a little gem that immediately won the public's appreciation. Thanks to the passion and dedication of one of the most prestigious families in the wine world, Campo di Sasso has a bright future ahead of it.

The microclimate that characterises the Viognier vineyard is slightly warmer than the others, for incredibly rich grapes. Manual harvesting is followed by soft crushing. The must is then transferred to stainless steel tanks for fermentation at a controlled temperature. After resting for about 5 months, the wine is ready to be bottled.
