  • Sensations Colour and appearance: Straw yellow with fine, persistent perlage. Nose: The nose presents delicate fruity hints of apple and peach, in particular, and an elegant floral note reminiscent of acacia. Taste: Dry, lively, fresh, fairly smooth, characterised by pleasant savouriness and balanced acidity
  • Vinification The grapes, generally harvested around mid-September, are brought quickly to the cellar so as to avoid mechanical damage, early oxidation, microbial contamination and exposure to the sun, which could cause alterations to the product, compromising its quality. This is followed by destemming and soft pressing in order to separate the skins from the must, and finally by decanting or cleaning of the must. The first fermentation takes place in steel tanks following the addition of selected yeasts. In accordance with the Martinotti method, the second fermentation takes place in an autoclave, a special pressurised steel tank that allows precise control of both pressure and temperature, which is maintained at 14 °C to preserve the fragrance and typical aromas present in the original grapes. During the transformation of sugars into alcohol, the yeasts naturally release carbon dioxide, which dissolves into the wine, making it 'sparkling'. At the end of the sparkling process, the wine is cold-stabilised, filtered and bottled.

  • The grapes, generally harvested around mid-September, are brought quickly to the cellar to preserve all the goodness of the initial fruit. This is how Bottega's signature Millesimato is born. From a careful selection of Glera, Chardonnay and Pinot grapes, harvested just when they have reached the right degree of ripeness. In the winery, the grapes are then destemmed and softly pressed, to separate the skins from the must, and cold decanted to eliminate all impurities. This is followed by the first fermentation, in temperature-controlled steel tanks, and the subsequent passage into an autoclave for frothing. At the end of this process, the wine is cold stabilised, filtered and bottled. The result is a bubble of great pleasantness, in Brut version, therefore dry but not too dry. Perfect for more than one occasion. From an aperitif with friends to an informal dinner. Excellent with fish, especially fried fish. A simply perfect combination. Try it... to believe!
