Apollonis is a unique company. Its founder, Michel Loriot, likes to call himself a melomaniac winemaker because of his habit of playing classical music in the vineyard and in the cellar to promote the growth of the grapes and the ripening of his wines. Whether it is genius or madness matters little when one has the opportunity to taste wines of such workmanship. Champagne Authentic Meunier Blanc De Noirs is born, as is easy to guess, from a selection of 100% Pinot Meunier grapes, the typical variety of Champagne that guarantees consistency in production and a beautiful variety of aromas and flavors in the finished wines. In this case the vineyards are about 35 years old and the Champagne matures in the cellar, in contact with its yeasts (and background music) for about 2 years. This reveals a beautiful wine characterized by a golden yellow color and fine, persistent perlage. On the nose, notes of pear and melon and a nod to fresh butter. In the mouth, however, it is fresh, savory and lively, well supported by a long persistent finish. A wine endowed with beautiful harmony, it is perfect right from the aperitif. With delicate fish it goes well. With white meat main courses, if not overly complex, it is still a good choice.
