    • Sensations Ruby red colour with garnet reflections. The nose is dominated by aromas of red fruit jam, pomegranate and blueberry, combined with herbaceous and floral notes. On the palate, it is juicy and complex, with good body, plenty of acidity and perfectly integrated tannins. Notes of red fruits and aromatic herbs lead to a spicy and long finish.
    • Vinification The grapes are 60% destemmed, macerated for 40 days and fermentation is completed with indigenous yeasts. Aged for 18 months in 500-litre French oak barrels of third passage.

    • A glass that takes you straight to the slopes of an extinct volcano, among ancient vineyards and a family history that smacks of rebirth. This is Earth & Sky by Thymiopoulos Vineyards. We are in Naoussa, in northern Greece, a rugged and mountainous land dominated by Mount Vermio. Here the climate is continental, with hot summers and harsh winters, but the cool air descending from the mountains provides a remarkable temperature range. The soil is the real star of the region: sandy and rich in volcanic minerals, inherited from an ancient volcano that is no longer active. This unique combination gives the grapes a minerality and acidity that are the backbone of the wine. The Thymiopoulos family has been able to capitalise on this treasure, dedicating themselves passionately to the Xinomavro grape variety, the undisputed king of this area. Apostolos Thymiopoulos has taken up his father's legacy and transformed a small estate into a successful business, with a clear philosophy: to respect nature and the land, using organic farming methods that are good for the soil and the plants. Earth & Sky is a pure expression of Xinomavro. The grapes come from a single vineyard located at an altitude of almost 600 metres, where ripening is slower and the grapes can develop complex aromas while maintaining a fresh acidity. The vinification is artisanal, with fermentation in steel tanks and then 18 months of ageing in second and third passage French oak barrels. Dark, impenetrable ruby red in colour, the nose is an explosion of aromas: black cherries in alcohol, olives, a hint of dried tomato, and then a bouquet of sweet spices, such as cloves and cinnamon. But the most fascinating aspect is that underlying minerality that makes you think of a glass of volcanic earth. On the palate, it is powerful and complex, with a dense but velvety tannin structure that envelops the palate. The well-presented acidity makes it lively and encourages you to drink more. The finish is long, with a return of red fruits.

Ever since his family began cultivating vines, Apostolos understood that true greatness did not lie in elaborate techniques, but in allowing the land to express itself authentically. At the heart of this philosophy is an organic approach. Not a fad, but a profound choice. The vines at Thymiopoulos Vineyards grow in a living, healthy ecosystem, where no herbicides or pesticides are used. This means soils rich in life, healthier grapes and, as a result, wines that tell their story without filters. The star grape, as mentioned, is Xinomavro, a native variety whose name literally means “black acidity”. It is a generous grape with a thick skin and a strong character, which can be difficult to tame. However, Apostolos has studied it thoroughly, producing wines that enhance its elegance, complexity and depth, while remaining pleasant to drink. His wines, often compared in their elegance to the great reds of Burgundy or Piedmont, have a charm all their own, with aromas ranging from cherry and raspberry to the more intriguing notes of dried tomato, black olives and spices.
