    • Today, let's imagine we are travelling to Greece, along the winding roads of Macedonia. Here, an ancient local proverb says: a vineyard is like a child, it must be nurtured and loved. And it is precisely in this corner of the world, in Naoussa, that the Thymiopoulos family has been cultivating vines for generations, with an almost sacred respect for the land. This is where Atma is born, a wine that embodies the soul of the territory and its symbolic grape variety, Xinomavro. The vineyard where the Atma grapes come from is located at an altitude of about 450 metres, on clayey and calcareous soils that contribute to its distinctive minerality. The vineyards are managed organically, a commitment that Apostolos pursues with conviction, believing that the health of the land is the key to an honest and authentic wine. A blend of 75% Xinomavro and Malagouzia for the remainder, the latter brings more floral/fruity aromas, while Xinomavro gives the wine structure, acidity and a more intriguing profile. It is clear to the eye, with a light and bright straw colour. The nose reveals fresh citrus fruits (lemon, citron), light-fleshed fruits (nectarine, green apple), light Mediterranean herbs and the minerality of wet stone. On the palate, it is pleasantly crisp, naturally endowed with a lively but well-balanced acidity. The body is light to medium, and the finish is persistent. Excellent with baked blue fish, aromatic herbs, grilled vegetables and grilled white meats.

Ever since his family began cultivating vines, Apostolos understood that true greatness did not lie in elaborate techniques, but in allowing the land to express itself authentically. At the heart of this philosophy is an organic approach. Not a fad, but a profound choice. The vines at Thymiopoulos Vineyards grow in a living, healthy ecosystem, where no herbicides or pesticides are used. This means soils rich in life, healthier grapes and, as a result, wines that tell their story without filters. The star grape, as mentioned, is Xinomavro, a native variety whose name literally means “black acidity”. It is a generous grape with a thick skin and a strong character, which can be difficult to tame. However, Apostolos has studied it thoroughly, producing wines that enhance its elegance, complexity and depth, while remaining pleasant to drink. His wines, often compared in their elegance to the great reds of Burgundy or Piedmont, have a charm all their own, with aromas ranging from cherry and raspberry to the more intriguing notes of dried tomato, black olives and spices.
