We are in Naoussa, one of Greece's most famous wine regions, in Macedonia. Here, on the slopes of Mount Vermion, vineyards enjoy a unique microclimate, where altitude, cool mountain winds and the influence of the Aegean Sea come together to create the perfect conditions for growing high-quality grapes. In this setting, Artisans de Vignerons de Naoussa had a brilliant idea: to import Assyrtiko, a grape variety that usually grows in Santorini, to a place that is so different yet so similar in its ability to express the territory. The result is Skyphos Assyrtiko, a PGI wine from Macedonia. The grape variety is a real star, famous for its ability to maintain vibrant acidity even when fully ripe. Manual harvesting is followed by soft pressing and temperature-controlled fermentation to keep the aromatic heritage intact. Ageing in steel protects the purest soul of the wine, concentrating its expressiveness. In the glass, the wine has a bright straw yellow colour, almost reminiscent of the Greek sunshine. The nose is a symphony of aromas ranging from citrus notes such as lime and grapefruit to hints of white-fleshed fruit such as peach and green apple. All this is enhanced by a mineral soul, reminiscent of flint and salty breeze. On tasting, there is an immediate sense of overwhelming freshness, balanced by a solid structure and a persistent, savoury and dry finish that invites you to take another sip. Thanks to its acidic backbone and marine character, this wine pairs perfectly with fish dishes. Excellent with an octopus and potato salad or Sicilian swordfish rolls. Also perfect with a medium-aged cheese, such as a pecorino that is not too salty.
