Phigaia After the White by Serafini & Vidotto embodies the elegance of Montello... in a glass, of course. We are in Nervesa della Battaglia, where this beautiful winery produces this white wine with great character that reflects the tradition and innovation typical of the cellar. A tribute to the territory and the production philosophy of the winery, which has been promoting the unique characteristics of the area with passion and expertise since 1986. Rolling hills and iron-rich clay soils are ideal for viticulture. A favourable microclimate, influenced by the nearby Piave river and the Prealps, allows the grapes to ripen perfectly. Phigaia After the White is part of the Trevenezie IGT designation, which allows for a certain flexibility in the choice of grape varieties while maintaining high quality standards. Specifically, this wine is made from a blend of Sauvignon Blanc (70%) and Pinot Bianco (30%). The harvest takes place after mid-September. The Pinot Bianco ferments entirely in steel, while the Sauvignon Blanc is divided equally between fermentation in steel and new wood. The wine then matures on its fine lees in steel tanks until the next harvest, before being released for sale at least 18-20 months after harvesting. In the glass, it is bright with lively golden reflections. The nose offers delicate citrus and vegetal hints of pink grapefruit, cedar, mint and tomato leaf, accompanied by sweet notes of vanilla. On the palate, it is fresh, with an intriguing complexity conferred by brief ageing in wood. It pairs perfectly with raw shellfish and molluscs, risotto with lagoon shrimp, trenette al pesto, fried scampi and squid, and asparagus au gratin.
Serafini & Vidotto is a winery in Nervesa della Battaglia, in the heart of Montello, in the province of Treviso. It was founded in 1986 by Francesco Serafini and Antonello Vidotto, two friends united by a passion for wine and the land. Today, the winery is established as one of the most significant producers in the Montello-Colli Asolani DOC appellation. The Montello area, characterised by rolling hills and iron-rich clay soils, offers ideal conditions for viticulture. The proximity to the Piave River and the protection of the Alps create a microclimate favourable to the cultivation of grape varieties such as Cabernet Sauvignon, Merlot, Cabernet Franc, Recantina, Manzoni and, of course, the ever-present Glera. Today, the winery has around 25 hectares of vineyards, divided into several plots, each with its own unique characteristics. Among these, the “Colmel” vineyard is located on the highest hill in the village, while “Da Baracca” is located near the chapel dedicated to the aviator Francesco Baracca, a hero of the First World War. The winery has adopted sustainable agricultural practices from the outset, avoiding the use of chemical herbicides and promoting biodiversity through the planting of hedges and woods. Since 2019, Serafini & Vidotto has been certified “Biodiversity Friend”, demonstrating its commitment to environmentally friendly agriculture.
