Santa Tresa's Grillo Spumante Brut is one of the best examples of how a high-quality sparkling wine can be made from an indigenous Sicilian grape variety. 100% Grillo, this vine typical of western Sicily was for years used mainly for the production of Marsala. Today, on the contrary, thanks to its unique qualities of aromaticity and freshness, Grillo is more and more often vinified in purity, proving to be super versatile and suitable for various processes. Harvesting begins towards the end of August, when the grapes reach the right degree of ripeness, with a perfect balance between sugars and acidity, so as to maintain the natural freshness and minerality typical of the variety. The vinification of the base wine takes place in temperature-controlled steel tanks to best preserve the freshness of the initial fruit. Then, for the subsequent sparkling phase, the wine is placed in autoclaves at temperatures below 14°C and selected yeasts are added. The transformation is slow and at the end of the second fermentation an elegantly fine perlage is created in the wine. Straw yellow in colour with golden highlights, Grillo Spumante has fruity, citrus notes and fresh floral nuances. In the mouth it is well balanced and fresh. Perfect for an aperitif, it is an excellent accompaniment to fish and shellfish dishes.
This is the story of two siblings: Stefano and Marina Girelli. Two passionate mountain winemakers whose roots lie in the valleys of Trentino. Looking for new challenges, in 2001 they decided to buy a beautiful estate in Sicily. And to start there, more than a thousand kilometres from home, a new oenological adventure. This is how Santa Tresa, an organic winery, was born, located in the municipality of Vittoria, South West of Sicily. The estate is located about 240 metres above sea level and covers 50 hectares, 39 of which are vineyards. Native clones of Frappato, Nero d'Avola and Grillo, typical and characteristic of the area, have always been grown here. These have been joined by international varieties, such as Viognier which, despite its French origins, seems to have found ideal climatic conditions in this enchanted corner of Sicily.
