Rottensteiner's Pinot Bianco Carnol comes from South Tyrol, where the soil is hard and mineral, transforming a delicate grape variety into a white wine with a surprising structure and strong character. The history of this label is closely linked to the village of San Pietro in Carnol, the birthplace of Toni Rottensteiner, the man who, in the 1980s, led the winery towards the courageous choice of absolute quality. We are in the classic Santa Maddalena area, a natural amphitheatre that embraces Bolzano and enjoys an exceptional microclimate. Here, Pinot Bianco vines grow on sunny south-west facing slopes, caressed by breezes that guarantee ideal temperature variations to preserve the freshness of the fruit. Carnol is a pure Pinot Bianco. Without the intervention of other grapes, this wine perfectly expresses its territory. This is also thanks to the Tollhof vineyard, considered one of the best plots on the estate for this variety, located between 350 and 450 metres above sea level, where the porphyritic, sandy and loamy soils give the grapes an almost sharp minerality. Vinification takes place mainly in steel to keep the freshness intact, but a small part of the mass, about 5%, ferments and ages in barriques. This touch does not give the wine any woody notes, but gives it a softness and fullness that make it unique. In the glass, Carnol impresses with its bright straw yellow colour, enlivened by greenish reflections that anticipate its liveliness. The nose is an orderly explosion of fresh citrus fruits, crisp green apple and delicate notes of white flowers, with a finish reminiscent of fresh almonds. In the mouth, it is decisive: great freshness and full structure, almost buttery, leaving its mark. At the table, it is a true champion of versatility. It works well with salt-baked sea bass or Bolzano-style white asparagus.
Roter Stein, or “red stone”. Nomen omen, a name is a destiny. This stone is not just a decoration, but represents the very foundations on which the entire history of this family rests. It is porphyry, a reddish volcanic rock that dominates the slopes around Bolzano. On this difficult, mineral and decisive land, the Rottensteiners have been cultivating with dedication for centuries, even though the recent history of the family dates back to 1956, thanks to the vision of grandfather Hans, who began his adventure by selling bulk wine in Switzerland. In the 1980s, his son Toni realised that the future lay in bottling and absolute quality, and today the winery is run by the third generation, Hannes and his wife Judith, who are carrying on the family legacy with a fresh and contemporary spirit. But the Rottensteiners are not alone. The company is in fact the heart of an “extended family” that includes about 50 local winegrowers. These farmers, often linked to the winery by historical collaborations that have lasted for decades, tend small plots as if they were gardens, allowing the estate to draw on the best grapes from the entire Bolzano area and its surroundings. The production philosophy is clear and honest: wine must be elegant and sincere. The aim is to bring the purity of the grape variety and the imprint of the porphyritic soil to the glass. Another distinctive feature is the link with the five family farms, each with its own history and specific vocation, such as the famous Premstallerhof for Santa Maddalena or the Kristplonerhof.
