Should it still be needed, this elegant Brut Riserva from Letrari is tangible proof that Trentino grapes are perfect for producing Metodo Classico sparkling wines that can mature on the lees for a long time, acquiring complexity and depth. The base, as is normal, is Chardonnay and Pinot Noir grapes. Harvested exclusively by hand, they are vinified in a soft way so as not to alter their rich aromatic heritage. Then, after creating the base cuvée, the wine is bottled and literally forgotten in the cellar, in contact with its own yeasts, for at least 60 months, to enhance its smooth elegance. After disgorging, one discovers a bubble with great personality, characterised by a deep golden but bright and lively colour. The super fine and incessant perlage makes the appearance of this wine even more brilliant. The nose reveals fragrances ranging from bread crust to vanilla tones, on a background of ripe apple cream and dried fruit. In the mouth, however, it is full and round. A pleasantly complex bubble with notes of ripe fruit, citrus fruits and spices. It has a nice structure and a very persistent finish. Although it is also suitable for an elegant aperitif, this sparkling wine should always be served with important dishes. Fish soup, lobster Catalan style but also white meat dishes.
