    "Eutichiano" Rosso Colli di Luni DOC 2021
  • Colli di Luni DOC Rosso, Eutichiano is a blend of Sangiovese, Merlot and Ciliegiolo grapes. It is offered by Cantine Federici, La Baia del Sole. A fine wine from the area, characterised by a 'romantic' ruby red colour, particularly suitable - so its creators say - for its intense, fruity aroma and dry flavour, to accompany not only meat but also more elaborate fish dishes. Its name refers to Eutichiano, "pontiff and saint", originally from Luni. The grapes come from the estate's vineyards located in Castelnuovo Magra and Sarzana, between 50 and 150 metres above sea level. Plants with an average age of 20 years that are harvested in mid-September, with manual picking into 20 kg crates. In the cellar, the grapes are then carefully selected to be sent to the temperature-controlled fermentation phase that lasts about 15-20 days. This is followed by malolactic fermentation, again in stainless steel tanks, and an ageing phase in the bottle. Intense ruby red in colour, the nose reveals a beautiful bouquet characterised by ripe red berry fruit and spicy hints. In the mouth, however, it is pleasantly dry, with a good alcohol content that makes it soft. Good balance and pleasant, well-smoothed tannins. Particularly suitable with red meat dishes, stewed game, poultry, roasts and medium-aged cheeses.

Here, the excellent exposure, the beneficial temperature range, the constant ventilation, the proximity of the sea and the special microclimate that characterises the Levante Ligure region create the best conditions for a production of the highest quality, with wines characterised by remarkable organoleptic and olfactory complexity. The company's production facility is also state-of-the-art, equipped with the latest technology and a modern isobaric bottling line. The new wine cellar covers 1600 square metres and was inaugurated in 2015, designed and built according to the principles of bio-architecture. This complements the three existing historical structures and represents the family's desire to reduce environmental impact and maximise energy savings. Today, the company produces a wide range of wines, although Vermentino, Liguria's native grape par excellence, is the undisputed star. Whites appreciated worldwide for their freshness, elegance and finesse.
