  • Vinification Manual harvesting. Longer or shorter maceration depending on the vintage in pneumatic press. Soft pressing and straining of the juice at low temperature. The juice is fermented at controlled temperatures in cement and stainless steel containers. Fermentation is spontaneous through the addition of pied de cuve born in the vineyard. Maturation on fine lees for 4 months.

    "Sotto Villa" Vermentino Colline Lucchesi DOC 2021
  • Sotto Villa, Colline Lucchesi DOC from Fattoria Sardi, is a surprising Vermentino made from organic grapes. Harvested by hand, the processing of this Tuscan white starts with a more or less long maceration phase, depending on the vintage, in a pneumatic press. Fermentation at a controlled temperature in cement and stainless steel containers. Fermentation, it should be emphasised, is spontaneous and is favoured by the addition of pied de cuve born directly in the vineyard. After vinification, there follows an ageing phase on fine lees lasting 4 months. Pale yellow with greenish highlights, the nose is intense, complex and persistent, with notes of white flowers and pear, peach and grapefruit. There is also a slight spicy hint of green pepper and Mediterranean herbs such as sage and mint. In the mouth, it is fresh, full, savoury and well balanced. An aperitif white, it satisfactorily accompanies fish and shellfish dishes.

    Fattoria Sardi is located in central Italy, in north-west Tuscany, and more precisely in the countryside nestled between the Apuan Alps, the Apennines and the Tyrrhenian Sea. We are only 5 kilometres from the walls of the city of Lucca. The company's estates are developed between two rivers, the Freddana and the Serchio, with different soils depending on altitude and correct exposures towards the south-east, south-west. The proximity to the sea ensures plenty of light and constant ventilation, while the mountains guarantee a good water supply and a beneficial temperature range between day and night, especially in summer. 20 hectares of specialised vineyards, conducted with full respect for nature and its rhythms. An organic farm, it also makes use of the tools of biodynamic agriculture. This gives rise to natural wines, obtained without the use of exogenous products. Good and territorial products, therefore. But also wines that respect nature and are healthy for consumers.
