    • Vinification Manual harvest. Vinification: the grapes are harvested entirely by hand, when perfectly ripe and during the coolest hours of the morning. The whole grapes are gently pressed in the cellar. After an initial racking, the free-run juice is placed in temperature-controlled fermentation tanks. Ageing: the wine remains on its fine lees for at least 8 months before bottling.

    • Doro Princic's Collio DOC Malvasia Etichetta Blu is produced in the heart of Friuli, in Cormòns (GO), an area considered one of the best in Italy for the production of high-quality white wines. Here, the soils are marly and rich in minerals, while the climate is influenced by the proximity of the Alps and the Adriatic Sea. This combination creates ideal conditions for growing Malvasia Istriana, a grape variety that expresses all its elegance and complexity here. The grapes are harvested by hand in the coolest hours of the morning to preserve their integrity. In the cellar, the grapes are then gently pressed, and the free-run juice, the most prized part of the juice, is fermented at a controlled temperature. At the end of this process, the wine is aged on its fine lees for at least 8 months, acquiring structure, complexity and a pleasant roundness. Doro Princic's Malvasia Etichetta Blu is straw yellow in colour with greenish reflections, a sign of its freshness and vitality. The nose reveals a broad and aromatic bouquet with notes of apricot, peach and a slight hint of rose. On the palate, it is fragrant with an apple-like finish and a pleasant minerality that makes it elegant and persistent. Excellent today, this Malvasia has excellent ageing potential. If stored correctly, it can evolve in the cellar for 5-10 years. It pairs well with fish dishes, especially shellfish and lean fish.       The Doro Princic winery is a beautiful estate in Collio, one of the most renowned areas of Friuli Venezia Giulia for the production of high-quality wines. Founded in 1950 by Isidoro Princic, affectionately known as “Doro”, the winery has played a fundamental role in the development and promotion of the region's wines. Doro, a self-taught winemaker, began bottling his first wines in 1952, distinguishing himself as one of the pioneers in promoting the oenological potential of Collio. His vision and dedication led him to become a central figure in the Collio DOC Consortium, contributing significantly to the growth and recognition of the appellation. Today, Doro's legacy is carried on by his son Alessandro, known as Sandro, who, together with his wife Grazia and son Carlo, continues to promote the authentic traditions of the area. The family passionately and expertly manages approximately 12 hectares of vineyards located in Pradis, between Capriva and Cormòns, considered one of the most suitable micro-terroirs in the entire appellation. The winery's production philosophy is based on careful vineyard management and winemaking practices that respect the fruit. Yields are kept low to ensure excellence in every label, following the teachings of the founder.
