Doro Princic's Collio DOC Malvasia Etichetta Blu is produced in the heart of Friuli, in Cormòns (GO), an area considered one of the best in Italy for the production of high-quality white wines. Here, the soils are marly and rich in minerals, while the climate is influenced by the proximity of the Alps and the Adriatic Sea. This combination creates ideal conditions for growing Malvasia Istriana, a grape variety that expresses all its elegance and complexity here. The grapes are harvested by hand in the coolest hours of the morning to preserve their integrity. In the cellar, the grapes are then gently pressed, and the free-run juice, the most prized part of the juice, is fermented at a controlled temperature. At the end of this process, the wine is aged on its fine lees for at least 8 months, acquiring structure, complexity and a pleasant roundness. Doro Princic's Malvasia Etichetta Blu is straw yellow in colour with greenish reflections, a sign of its freshness and vitality. The nose reveals a broad and aromatic bouquet with notes of apricot, peach and a slight hint of rose. On the palate, it is fragrant with an apple-like finish and a pleasant minerality that makes it elegant and persistent. Excellent today, this Malvasia has excellent ageing potential. If stored correctly, it can evolve in the cellar for 5-10 years. It pairs well with fish dishes, especially shellfish and lean fish.
