Il Drago e le Otto Colombe is an interesting Toscana IGT produced by Donatella Cinelli Colombini at Fattoria del Colle. It is a typical red wine of its land of origin, with the right character to accompany the region’s traditional dishes with real satisfaction. This is the wine to open when a thick Fiorentina steak is slowly cooking on the grill, or when the snack includes a generous sliver of pecorino cheese and a slice of Tuscan bread. It comes from organic vineyards, and is processed by hand, as has been the case for centuries. Only women work in the winery, the doves that give the wine its name and that are reproduced on the label. With them there is also a dragon, Carlo Gardini, Donatella Cinelli Colombini's husband, one of the inspirers of the new experiments. Aged in small oak barrels handcrafted by 4 French cooperages, this red wine is an extremely democratic wine. In the sense that everybody really likes it.
