It comes from a pure processing of Rolle grapes, grown with care and attention to nature on the beautiful estate located a few kilometers from the town of Saint Tropez. Grapes ripen well here, thanks to unique climatic and environmental conditions. On the one hand, protection from the winds provided by the presence of the mountains, and on the other hand, proximity to the sea, which provides good ventilation and equally beneficial light. Vineyards here range from a minimum of 10 meters above sea level to a maximum of 400 meters, with a south/south-east exposure that ensures perfect insolation and the right temperature range between day and night. The harvest, which is mechanical and nocturnal, allows producers to bring healthy, fresh grapes to the winery without affecting the delicate aromatic framework. Super soft vinification follows, with cold fermentation and aging of the wine in steel. Straw yellow color with greenish hues, the nose is intense and complex. An important note of yellow fruits and citrus is immediately perceived, followed by pleasant floral notes. In the mouth, there is the same intensity and fruity scent reminiscent of yellow fruits, white peach and apricot, as well as floral notes of white flowers. On the finish, then, a pleasant minerality makes the wine particularly elegant. Good persistence that gives each sip a long sensation of freshness and savoriness.
