‘Orsuro is the cool breeze that descends from Mont Sainte-Victoire until it reaches our glass: Orsuro is a rosé that refreshes like the wind from which it takes its name.’ The vineyards are located in Pourcieux, on the slopes of Mont Sainte-Victoire, the mountain immortalised in Cézanne's paintings. The poor, pebbly soils drain quickly, forcing the vines to develop deep roots and produce small, aromatic bunches. The sharp temperature contrast between day and night, accentuated by the wind, preserves acidity and aromas. The AOP Côtes de Provence, established in 1977, is now the largest in south-eastern France. Within it are sub-zones such as Sainte-Victoire (recognised in 2005), which showcase the fresher, more mineral terroirs. The regulations mainly protect rosé wines, the region's calling card. A blend of Grenache noir, Cinsault, Syrah and Rolle, or Vermentino, the grapes are harvested mechanically at night to keep temperatures low. In the cellar, the grapes undergo a short cold maceration on the skins and direct pressing under an inert atmosphere. Alcoholic fermentation takes place in steel at low temperature, followed by ageing for about 5 months in stainless steel tanks to enhance freshness and aromatic purity. Pale pink in colour with violet reflections, the nose reveals a complex aroma of peach, citrus and exotic fruit. Full but smooth on the palate, with notes of pink grapefruit and pear and a fine acidity that lengthens the finish and invites you to take another sip. Designed to be drunk young, it pairs well with beef carpaccio with Parmesan shavings and, more generally, summer dishes based on fish, grilled vegetables, sushi or cereal salads.
