Called Lieu-Dit Dalivard, it is a Brut Nature and is produced by Thibaut et Alizée Tassin, a very small Champagne Maison. The Chardonnay grapes (in purity) come from a single parcel located near Celles-sur-Ource, characterised by a north-west exposure and a subsoil rich in brown clays. These retain water and slowly release nutrients to the vines, promoting slow and regular ripening of the grapes. Thibaut et Alizée Tassin, young exponents of the new Champagne, adopt a sustainable approach in the vineyard, based on respect for the environment and the enhancement of terroir. The use of chemical products is reduced to a minimum and biodiversity is promoted by grassing the vineyards. The grapes are harvested by hand and vinified in wood and amphorae. Fermentation, clarification and stabilisation take place spontaneously, without any intervention by the vigneron. This artisanal approach results in a pure and authentic wine that best expresses the characteristics of the terroir. On the nose is a complex bouquet of citrus fruits, white flowers and mineral notes. In the mouth, however, it is fresh and vibrant, with a fine and persistent bubble. The finish is long and savoury, with a pleasant return of minerality. A wine with great personality, it represents a unique sensory experience for lovers of authentic and refined wines. Thibaut and Alizée Tassin are a young winemaking couple representing the new generation in the Champagne region. Their story begins with a generational change, not without compromises with their parents, culminating in 2019 with the decision to start a new business on their own. Thanks to an advance on their inheritance, they obtain just over a hectare of vineyard divided between two plots in Celles-sur-Ource. In love and full of enthusiasm, they also found an old farm in Landreville that they transformed into a base and cellar. Their choices in the vineyard are guided by a deep respect for nature. Analysis and observation of the soils are fundamental to understanding how best to work. The indigenous flora that grows among the vines is carefully studied to favour biodiversity and natural balance. The approach in the vineyard is therefore bio-integral: pruning that follows the flow of the sap, working the soil without using chemicals and fertilising only with organic compost. The conversion to organic began in 2021. Today, the company has around 3 hectares of vineyards and a production of 14,000 bottles. Although small, they have already won the appreciation of critics and enthusiasts.
