The power of Cabernet Sauvignon meets the elegance of the Chianti hills. The result? This interesting red wine from Castello d'Albola, a historic estate stretching between 300 and 550 metres above sea level in the heart of the Chianti Classico region, in Radda in Chianti. This area is characterised by very unique soils that give the wines a beautiful mineral structure and distinctive elegance. Acciaiolo, Toscana IGT Rosso, is made from 100% Cabernet Sauvignon. In the past, the wine also included a percentage of Sangiovese, but more recent vintages focus exclusively on Cabernet Sauvignon, expressing the full potential of this grape variety in the Chianti terroir. The grapes are harvested by hand and carefully selected in the vineyard. Fermentation takes place in temperature-controlled stainless steel tanks, with a maceration period on the skins of 3-4 weeks. The wine then undergoes malolactic fermentation, again in steel, before maturing for about 18 months in French oak barriques. Finally, it is aged in the bottle for about 18 months. Intense ruby red in colour, the nose reveals aromas of wild berries, plum and liquorice. Rich and elegant, it reveals a fine, harmonious acidity and remarkable persistence from the first sip. Already enjoyable today, thanks to its structure and the high quality of the grapes, Acciaiolo has an ageing potential of 15-20 years, during which it develops complexity and depth. It is a magnificent accompaniment to roasts, braised meats and game. It is also ideal with mature cheeses with a strong flavour.
