  • The grapes selected for the production of this prestigious wine come from the sunny vineyards surrounding the Sabiona Monastery, described as the Acropolis of Tyrol. Here, too, we are at over 550 metres above sea level, where the climate is decidedly cool and the sun warms the grapes, which ripen slowly in excellently exposed vineyards. The Sylvaner, a vine of German origin, has characteristics in common with the Riesling, although it is less popular than the latter. The vine is very resistant to frost and guarantees producers excellent yields every year. Cantina Valle Isarco produces a particularly interesting version, thanks to the careful processing in the cellar. It starts with a gentle crushing after a short time in contact with the skins. This is followed by the temperature-controlled fermentation phase, half of which takes place in large acacia wood barrels and half in stainless steel tanks. Before being bottled, the wine remains in contact with its noble lees for about 7 months. The result is a white wine characterised by a beautiful light yellow colour with greenish reflections that clearly indicate its fresh nature. Fruity, with hints of peach and green apple, it has an extremely elegant nose with mineral notes in clear evidence. In the mouth, however, it reveals a good body, with markedly lively fresh tones and a lovely, persistent finish. Good right from the start, it is a wine that expresses itself best in its first years of life. Perfect as an aperitif, it is the ideal white to accompany fish dishes. Also excellent with cheeses that are not too mature.

    Despite the fact that the Valle Isarco valley has an ancient winemaking tradition, the beautiful cooperative winery was only founded in 1961 by 24 families. Cantina Valle Isarco is the youngest wine cooperative in South Tyrol and today, after more than 60 years, can count on the work of 135 members who cultivate a total of 150 hectares of vineyards in 11 municipalities from Bolzano to the south of Bressanone. The Valle Isarco offers one of the most beautiful natural landscapes in South Tyrol, characterised by majestic mountains, ancient farms, castles, monasteries and villages, magnificent chestnut groves and above all terraced vineyards with their neat stone walls. Here, the vine-dressers carry out 'heroic' work, accustomed as they are to caring for predominantly steep terrain, with plants growing up to 950 metres high. Vineyards that are often tiny in size, but just as often characterised by unique soil and climate conditions. The special microclimate of this area, characterised by hot summer days and cold nights during the harvest period, ensures the production of fresh, fruity and mineral-rich wines. Overall, the Cantina Valle Isarco produces around 950,000 bottles a year, divided between 14 varieties, of which 10 are white and 4 red. The total number of labels is 28, including some very interesting special editions. The winery's "white" vocation is best expressed through the good local grape varieties, such as Kerner, Sylvaner, Grüner Veltliner, Gewürztraminer and, of course, Müller Thurgau.
