The taste is ripe fruit with citrus notes, resulting in a fresh, structured wine with a long, savoury finish. Macchia Sacra is a rich wine that can evolve over time, acquiring spicy saffron tones and a deep, complex bouquet.
    • Vinification Vinification: Manual harvest in two stages: first selection of the finest grapes for maceration on the skins, then the remainder. The must ferments in steel and the masses are aged in cement for five months separately, then blended the following spring. Ageing: The wine is aged in cement for a further year with regular suspension of the fine lees, then bottled at least a year and a half after the harvest. Maturation is completed in the bottle with an ageing potential of several years.

    • It is called Macchia Sacra and is a Fiano Lazio IGT, produced by Castello Torre in Pietra. It is grown on volcanic soil, a mixture of sand and tuff that gives the grapes a unique minerality and unmistakable flavour. The entire estate has been certified organic for years, while the name, Macchia Sacra, is a tribute to the history and nature of the place, a reference to the sacred forest that has surrounded the castle for centuries. A pure Fiano, the grapes are harvested by hand at two different times to balance aroma and freshness, and part of the bunches are pressed with a delicate maceration on the skins. The wine is then aged for months in concrete tanks and French oak barrels, with constant stirring of the yeasts. It is a meticulous process that results in a structured and enveloping sip. In the glass, Fiano Macchia Sacra has a fascinating golden-yellow colour, which already suggests its richness. On the nose, the bouquet evokes hints of ripe fruit, such as peach and apricot, followed by more complex and unmistakable notes of toasted hazelnut and acacia honey. A touch of saltiness and a hint of saffron complete an aromatic picture of great elegance. On the palate, it is full and round, fresh and vibrant. Its marked minerality and persistent sapidity immediately invite another sip. To enhance its character, pairings must be equally bold. It is perfect with more elaborate seafood dishes, such as shellfish soup or stewed octopus, but you can also dare to pair it with more unusual dishes, such as tagliatelle with porcini mushrooms or even truffle risotto.

      The history of the Castello di Torre in Pietra winery dates back to the 16th century, when the estate belonged to the Peretti family of Pope Sixtus V. The historic cellar is carved out of tuff, a true masterpiece of natural engineering and the ideal place for wine production and storage. It is a cool, stable and perfectly insulated environment where wine has been able to evolve for centuries, preserving the secrets of a precious art. The recent history of the estate began in 1926, when it was acquired by Senator Luigi Albertini, former editor of the Corriere della Sera newspaper. Forced to leave his post due to his opposition to fascism, Albertini devoted his energies to transforming the estate into a model farm. It was he, together with his heirs, who gave new impetus to the wine business, expanding the winery and planting new vineyards. The current owners are the children and grandchildren of his heirs. As far as production philosophy is concerned, the company has been applying the principles of organic farming since the early 2000s and is now officially certified. The aim is to produce a wine that is the most authentic and genuine expression of the territory, without resorting to pesticides, herbicides or chemical additives, and limiting the use of sulphur dioxide to a minimum.
