In the heart of Salento, in Guagnano in particular, Negroamaro is not just a grape variety, but a true symbol of identity and tradition. This is where one of the region's most iconic wines is produced, the Teresa Manara Salice Salentino DOC Riserva from the Cantele Winery. A wine that is unique in its own way. Made from 100% Negroamaro grapes, Cantele's vineyards are cultivated using a variety of methods, some modern, such as espalier with spurred cordon, others more traditional, such as alberello. The harvest takes place in the second half of September. After crushing, the must macerates with the skins for a period ranging from 8 to 15 days, fermenting in steel at a controlled temperature. The wine then undergoes malolactic fermentation and matures in French oak barriques for about 12 months. Teresa Manara has a beautiful intense ruby red colour in the glass, enriched with black cherry reflections. The nose reveals a complex bouquet of red fruits and flowers, with notes of violet, mastic, blackcurrant and spicy hints of undergrowth and Mediterranean scrub. However, it is on the palate that it surprises with its character. It is bold and decisive, typical of Negroamaro, but at the same time shows a sensitive finesse. This wine can be enjoyed immediately or cellared for up to 10 years, during which time it will develop further aromatic complexity. A story that has been upside down since its inception when, in 1950, Giovanni Battista Cantele, from Pramaggiore in Veneto, and his wife Teresa Manara, from Imola in Romagna, decided to move from northern Italy to Puglia, in the province of Lecce. The family patriarch, it should be noted, was already involved in the bulk wine market. The second step back in time is linked to the birth of the company. In 1979, the decision was made to start out solely with the sale of bottled wines, and then, over time, move up the production chain. The first harvest dates back to 1992 and the farm was established in 1999. Since then, the Cantele family's activities have continued unabated, until 2002, when the new winery was established in Guagnano, in the heart of the Salice Salentino DOC area. Today, the company is well established both in the main foreign markets and at home, and is one of the most appreciated producers in its region.
