It is difficult to say whether this is the most famous Primitivo in Italy. It certainly ranks among the top five most iconic and recognized wines of Puglia. Teresa Manara Primitivo, in fact, perfectly represents the soul of Salento. Born in the sunny lands of Guagnano, this wine is a tribute to Teresa Manara, a central figure in the history of the winery, whose passion and determination have inspired generations of winemakers. Salento, known for its warm, sunny climate with sea breezes that mitigate the summer temperatures, offers ideal climatic conditions for viticulture, thanks also to its calcareous and clayey soils. Here, the native Primitivo finds its maximum expression. The vines are grown both using the traditional Salento alberello method and on espalier with spurred cordon. The harvest takes place in the first half of September, combining manual and mechanical harvesting. After crushing, the must macerates with the skins for about 10-12 days, fermenting in steel at a controlled temperature. The wine then undergoes malolactic fermentation and matures in French oak barrels for about 12 months. Intense ruby red in color with violet reflections, the nose reveals a complex and wild bouquet with notes of black cherry, cassis, mint, laurel, cumin, sage, rhubarb, a slight smoky hint, iron, vetiver, and Gargano orange. On the palate, it is pleasantly enveloping, rich and smooth, with an imposing structure supported by balanced acidity and tannins that are present but never aggressive. Thanks to its structure and beautiful complexity, this Primitivo pairs well with grilled red meats, pork ribs in sauce, game and aged cheeses. Its versatility also makes it ideal with rich and flavorful first courses from the Salento and Italian traditions.

The first harvest dates back to 1992, and in 1999, the farm was established. Since then, the Cantele family has continued to work tirelessly, until 2002, when the new winery was established in Guagnano, in the heart of the Salice Salentino DOC area. Today, the company is well established both in the main foreign markets and at home, and is one of the most highly regarded wineries in its region.
