Alto Adige DOC Pinot Bianco Tradition from Cantina di Terlano is a wine that perfectly reflects the South Tyrolean terroir. The grapes are harvested and selected by hand. Then, once they reach the winery, processing begins with gentle crushing, followed by racking by natural sedimentation. Fermentation is slow and takes place at a controlled temperature in stainless steel tanks. At the end of the transformation, the wine continues with an aging phase lasting 6-7 months on fine yeasts in steel barrels. In the glass, it has a beautiful light straw yellow color with a light greenish veil. On the nose, notes of pear and fresh apple emerge, accompanied by aromas of gooseberry and nuances of chamomile and lemongrass. In the mouth, it proves assertive, with a pleasantly fruity, mineral and savory character. The finish is long and persistent. At the table it goes well with fish-based appetizers, such as salmon and tuna carpaccio. For lovers of local cuisine, its marriage with typical South Tyrolean dishes, such as spinach gnocchetti and spinach crescents, is perfect.
Founded in 1893, Terlan Winery is one of the most progressive winemaking cooperatives in all of South Tyrol. Its 143 current members cultivate 190 hectares of vineyards, resulting in a total annual production of about one and a half million bottles, divided into two lines, to which are added a few gems of great oenological value. In the modern winery they ripen exclusively DOC wines, especially whites, thanks mainly to the new area built in 2009, where the wines have all the space they need to grow and develop to their full potential. From an architectural point of view, the Terlan Winery also deserves a special mention. On the outside, in fact, part of the building has been covered with red porphyry, the typical rock of the area, while the roof of the winery has been greened and covered with vines, thus integrating into the surrounding cultivated landscape. The winery's wine archive is unique in Italy with its 100,000 bottles from the 1955 vintage to the present. However, the winery also holds some ancient treasures: some bottles dating back to the year of its founding!
