Tasca d'Almerita's Grillo Cavallo delle Fate is a sunny and intriguing white wine that embodies all the history, warmth and beauty of Sicily. We are in Regaleali, an amphitheatre of hills between the provinces of Palermo and Caltanissetta, about 500 metres above sea level. Here, the vineyards enjoy a unique microclimate, with warm, sunny days tempered by cool nights and mountain breezes coming from the Madonie mountains. It is precisely this beneficial temperature range that allows the Grillo to ripen slowly, preserving fresh aromas and vibrant acidity. Grillo, a grape variety once used almost exclusively for Marsala, has found a new lease of life in Regaleali. It all begins in the San Francesco vineyards, where, after careful manual selection, the grapes are harvested at the end of August to capture the best of their aromatic potential. Fermentation takes place in temperature-controlled steel tanks. The wine is then aged for about four months on its lees, again in steel, to enhance its spontaneity and varietal character. The result? A glass that shines with its own light, with a beautiful straw yellow colour and greenish reflections. Bringing your nose close to the glass reveals a rich bouquet ranging from floral, with notes of jasmine and orange blossom, to fruity, with citrus fruits such as grapefruit and lime, along with white peach and almond. On the palate, it is agile and vibrant, with a mouth-watering mineral savouriness. The balance is perfect, the freshness is combined with a pleasant softness, ending with a long and clean finish.
