    "Angel" Spumante Brut
  • We are in Campania and the grape variety used here is Aglianico. Rossella Cicalese offers it here in a very interesting version. A bubbly with an exquisitely territorial character. The noble red grape variety typical of our south, in fact, also proves to be a perfect basis for a simple and immediate bubble, thanks to its natural freshness and super-controlled vinification. Harvested between 14 August and 30 September, the grapes used in this case come from the company's Eboli vineyards. We are in the province of Salerno, in what is considered one of the main production centres of Campania's Buffalo Mozzarella PDO. Vinification of the sparkling wine bases in thermo-conditioned tanks, after the first fermentation the wine is passed into an autoclave for the frothing phase, according to the classic Martinotti method. What results is a cheerful effervescent bubble, characterised by a brilliant straw yellow colour. On the nose, it is fresh and fragrant, with notes of peach, citrus and bread crust. In the mouth, it has great freshness and finesse, as well as a long, clean finish. It is the bubble of the territory that knows how to accompany a non-trivial aperitif with pleasure. At table, on the other hand, it proves excellent with all hors d'oeuvres, fried food and even pizza. If the occasion is right, it also goes well with raw fish and shellfish.

    The Rossella Cicalese company was founded in 2012. It is a beautiful family business, initially based on land inherited from her great-grandfather. In 2012, the first vineyards were planted in Eboli, and two years later, in 2014, in Perdifumo, also in the province of Salerno. The choice of territories is not random, but targeted and detailed. A total of four and a half hectares that enjoy a favourable microclimate and a fairytale setting, that of Campania Felix. In this context, the vineyards are rooted in a fertile and fruitful land. Guyot-trained Aglianico and Fiano vines are cultivated under an integrated pest management system, with a reduced use of chemicals. Low environmental impact techniques that also characterise the entire vinification process.
