Carema Riserva DOC 2019

An unusual wine, if only because of the restricted area of production. We are talking about a fine Carema DOC, in the Riserva version. Nebbiolo grapes, from terraced vineyards in the municipality of the same name, cultivated using the pergola system, with an ancient traditional system of great charm. A quiet, non-aromatic red, characterized, however, by a sustained structure, deriving in part also from the long period of maturation in the cellar, about 3 years, including at least 12 months in large oak barrels. Garnet red with light orange hues, the nose reveals an intense and heady bouquet, with notes of fruit under spirits and dried flowers, sweet spices, cinnamon, licorice root and even cocoa. In the mouth it is very smooth, harmonious and balanced, thanks also to the pleasant sweetness of the tannins. An important wine that requires a level pairing. Try it with red meats and game, but also with flavorful cheeses from long aging.
