After swirling the glass for a long time, notes of demi-glace and dried herbs shyly emerge. Cedar, mahogany, shellac omnipresent given by the oak. Shoe polish, black liquorice and aniseed given by the fruit. Cinnamon butter. Medium-bodied. A savoury side of red fruits, blueberry, pomegranate, raspberry. Creamy, naturally balanced by the interplay of acidity and extract. Madagascar vanilla and juniper enliven the whole. Silky tannins create a finely layered, dusty, almost chalky character. The back of the palate is succulent, and a tactile freshness and Vietnamese mint sensation emerges in the actual finish.

  • Born in the sunny lands of Coonawarra, Australia, is Penfolds' BIN 128 Shiraz. A legendary red wine that epitomises the essence of Australian Shiraz. A label that has made history, conquering the palates of connoisseurs around the world with its complexity, elegance and ageing potential. But let's proceed in order. The Coonawarra region of South Australia boasts a cool temperate climate and soil rich in limestone and red clay. These unique soil and climate conditions create an ideal environment for growing Shiraz, resulting in grapes of exceptional quality. BIN 128 is produced from selected grapes through a meticulous vinification process. The fermentation takes place in small stainless steel tanks, preserving the freshness and fruity aromas as best as possible. The wine then rests for about 12 months in French oak barrels of different ages, acquiring complexity and structure. On the nose, BIN 128 seduces with an intense and complex bouquet. Mulberry, loganberry and wild blackberry blend with notes of coffee zabaglione and dried herbs. Cedar, mahogany and shellac reveal the presence of oak, while shoe polish, black liquorice and aniseed add to the wine's complexity. A touch of cinnamon butter completes the olfactory picture. In the mouth, it is medium-bodied, with hints of red fruits, blueberry, pomegranate and raspberry. The creaminess is balanced by lively acidity and velvety touches. Silky tannins create a long, lingering finish, characterised by notes of mint. Bin 128 is a wine with great ageing potential.     Established in 1844 by Christopher Rawson Penfolds, the Penfolds Estate is still one of Australia's best known and most respected wineries. The founder was a young doctor of English origin and was firmly convinced of the healing properties of wine. That is why, before leaving his homeland for the other side of the world, he procured French vines that were planted in Adelaide, near the cottage that Penfold built with his wife. Initially, the Penfolds winery produced almost exclusively brandy and fortified wines, to be used for medicinal purposes. Then, around 1950, the slow migration towards the production of table wine began. Today, the company is owned by Tooth and Co. and there is total respect for the environment in the countryside. This, combined with perfect control of every stage of processing, allows Penfolds to continue to surprise wine lovers and experts, year after year, with ever more interesting wines.
