  • For those who want to learn about the world of Paul Clouet and his Champagnes, this Selection Grande Réserve may be an excellent starting point. It is a blend of the three typical grapes of the region, with Pinot Noir alone accounting for half of the blend. With it, 30% Chardonnay and Pinot Meunier for the remainder. A fresh and immediate Champagne, in this case the wine rests for "only" 24 months on the lees and, after disgorgement, a liqueur d'expedition consisting of about 7 grams of sugar per liter is added to the wine. Overall, then, this is a pleasantly dry but not extreme wine, with aromas still recalling fresh fruit, rose and typical mineral sensations. Great for an elegant aperitif, it is also perfect with shellfish and is a must try with bread, butter and anchovies.

    Paul Clouet is one of the many small entities in the Champagne region capable of producing wines of the highest quality from grapes harvested in its own estate vineyards. Founded in Bouzy in 1907, the winery can count on a unique terroir with excellently exposed vineyards and chalky soils that are well suited to growing Pinot Noir. The Paul Clouet winery, now owned by Maire-Thérèse, granddaughter of the founder, covers about 6 hectares, divided among fifteen parcels all within the Grand Cru of Bouzy. The vineyards have an average age of about 30 years and produce between 50 and 60 thousand bottles annually. Handcrafted products with unmistakable style.
