Henry of Pelham Family Estate processes its Chardonnay with a distinctly French style. Vineyards in the Niagara Peninsula area, after the harvest the grapes are brought quickly to the winery to be processed in full respect of the starting fruit. Fermented in stainless steel at a controlled temperature, before racking the wine is left to age sur lie, that is, on its noble lees, to gain greater complexity and depth of flavor. The glass thus reveals an intensely straw-yellow wine with a broad, fruity bouquet that ranges from still crisp apple, to grapefruit. An excellent example of Chardonnay from a cool climate.
Henry of Pelham Family Estate. Six generations of Henry's family have been at the helm of this fine company since the late 18th century. The turning point came in 1984, when the parents of the current owners decided to completely renovate their vineyard, uprooting the old varieties grown by their ancestors in order to focus firmly on vines from the old world and suitable for the production of quality wines. At that time, Canada was still far from being a country known for wine production. But Henry of Pelham's gamble was definitely won. The soils and climate of their vineyards proved perfectly suited for the purpose, and production did not take long to come to the fore.
