  • Sensations Produced from a selection of Grechetto grapes, Schietto has been described by many as 'a wine for purists'. In Schietto you can find all the distinctive traits of Grechetto: minerality, pungency, savouriness. Unexpected, however, is the aromaticity and softness, not common in this variety but particular characteristics of the specific clone of Grechetto of Eredi dei Papi. Schietto, therefore, is aimed at a very specific public, capable of appreciating its qualities. It is a clear emblem of the company's philosophy of respecting and preserving the typical varietal characteristics, without altering them.
  • Vinification The must is left to ferment in steel tanks at a controlled temperature of 17°C. This temperature is then gradually lowered as alcoholic fermentation is completed, until the optimum temperature for the specific variety is reached. This is followed by a period of refinement on noble lees for about 40 days to enhance the complexity and improve the longevity of the wine. This also preserves the wine from possible oxidation during racking, minimising the need to add sulphites. Clarification follows exclusively with bentonite at an extremely low dosage to preserve aromas and colour. The subsequent filtration is carried out with a tangential filter.

    "Schietto" Grechetto Lazio IGT 2020
  • Schietto is a Grechetto. Produced with a selection of grapes belonging to the specific clone of Eredi dei Papi. A pleasantly varietal white that expresses all the distinctive traits of this grape variety, namely minerality, pungency and sapidity. What is surprising in this Schietto, however, is the aromaticity and softness, not so common in this variety. Vinified in temperature-controlled stainless steel tanks, this white wine matures on its noble lees for about 40 days before clarification and bottling. Characterized by a beautiful straw-yellow colour with greenish reflections, Schietto immediately reveals itself to be an extremely fresh and pleasant wine, so much so that it can be considered a perfect companion for aperitifs and quick starters. Try it also with a rich fried vegetable or fish dish or, for those who love local combinations, with a good dish of pasta all'arrabbiata.

    Chiara and Lorenzo Iacoponi are two siblings who grew up with bread and... "Castelli Romani". To be precise, they grew up in Monte Compatri among the hills, on the slopes of the Latium volcano, where their grandfather passed on to them a passion for nature and the vineyard. And it was here, in 2017, that they set up a winery, Cantine Eredi dei Papi, with the aim of producing top quality wines "made in Lazio". To do so, they base their activity on a simple golden rule: "wine is made in the vineyard". For this reason, from the very first years of activity, the two brothers have implemented a strict conversion of the vineyards from spurred cordon to guyot, with native vines planted over 20 years ago by their grandfather. The concept of terroir is a prerogative inseparable from the identity of the company, which, aware of the potential of the Lazio region, aims to become its ambassador on a national and international level.
